Pumpkin French Toast

Ingredients (Serves 1)

  • 2 Slices of Pumpkin Swirl Bread (or any bread will do)
  • 1 Egg
  • 1/4 C Almond Milk (or regular milk)
  • 1 T Cinnamon
  • 1/4 C Canned Pumpkin
  • 1/2 Ripe Mashed Banana


Combine egg, milk, cinnamon, pumpkin and banana all in a large shallow bowl.

Whisk together. Place bread into the mixture and coat evenly. Let this sit for 5-10 min.

Heat a skillet on medium high. Once the pan is hot, add the bread slices and cook 6-8 min each side.

Top with almond butter, blackberries, pumpkin spice granola and syrup.
