The Holy Grail of Pizza

I make a lot of different recipes, but by far, pizza is my favorite thing to create. I love the versatility, the unique combination ingredients, and the beauty of the pie when it all comes together. Most of all, I love the amazing taste of a sweet chewy crust, tangy tomato sauce and a plethora of diverse toppings.
After years of making my own pizza, I don’t think I could ever order a pie from a pizza joint and enjoy it as much as I do the homemade version. There is NOTHING like fresh, homemade pizza…nothing!

Tonight, my friends, I believe I have created a masterpiece. After you read this, I urge you to try it for yourself and see if you are not spellbound by this incredible pizza.

I give you…..

Grilled Vegetable Pizza with Goat Cheese, Hummus, and Pesto

Step 1: Cut of vegetables of choice – (I chose eggplant, zucchini, red pepper, and mushrooms) and toss in a little EVOO, salt and pepper.

Step 2: Grill the veggies until done (around 10-15 min)


Step 3: Take the crust (I used a premade, Bobboli because the premade is actually easier to do on the grill than fresh) and top it with

  • desired amount of sauce (I used TJ’s pizza sauce)
  • fresh spinach
  • grilled veggies
  • goat cheese
  • fresh torn basil leaves
  • dollop of basil pesto
  • dollop or two of hummus
  • drizzle of balsamic


Step 4: Put the pizza on the grill and cook for about 10-15 min

Step 5: Be prepared to be amazed!

Drool worthy…..

Toly’s pizza was his favorite, mozzarella, pepperoni, bacon and feta.

What a great way to end a weekend…..

You made this pizza just for ME, yes you did! Oh my…grilled…with grilled veggies….GOAT CHEESE (!!!!)…hummus, fresh pesto…oh my God…drool….

Oh my gosh–it looks like you combined all of my favorite things into one glorious pizza. THANK YOU! I would not think hummus and goat cheese would be good together, but now I have been proven wrong. Thank you!

I hate regular take-out pizza, but homemade gourmet pizza is AMAZING! Your pizzas look so delicious. I love that you added so many grilled veggies–yum! And goat cheese is hands down my fav. cheese. Love it :D

Your pizzas look so good. I too love homemade pizza. It is so much better than from a pizza place.
