It’s been quite a long week, but it is now over and I can enjoy a relaxing weekend.
The event I had yesterday for work went very well. I feel pretty good about the interview and think I nailed it; however, you never really know how you will be portrayed until the press hits the stands. We’ll see, but overall, I was pleased.
I started my morning with my new Friday ritual….yoga!
After running for 5 straight days, my muscles are pretty much shot by Friday. I can’t tell you how good it felt to stretch out my hamstrings. I could have stayed in downward dog for hours; however, I had greater things waiting for me.
Such as this….
1/3 C Natures Path Pumpkin Raisin Crunch, 1/4 C PB Puffins, Pumpkin Yogurt (1/4 C Vanilla Chobani and 1/4 C canned pumpkin) 1 tsp Mighty Maple, Bannas Blueberries and Flax
Why are yogurt messes so good? It’s the perfect balance of carbs, protein, sugars, and fats and really couldn’t be more satisfying.
I had a nice surprise waiting for me at work today.
My Blackberry arrived!!! (Or “strawberry” as my one co-worker likes to call them)
So in love with this machine. I have using my OLD ghetto phone from 8th grade for months now. I broke my last one and was waiting for my contract to run out before I was able to get a new one. When my boss told me she ordered me a blackberry, I could have kissed her! Apparently being a coordinator entitles you to some nice perks….a blackberry being one of them. My life feels complete again with another form of organization and technology. Perfect for my A-Type personality!
Work flew by without a second thought. I was busy all morning working playing with my new toy, writing more press releases, and visiting business partners. One was a new gym that opened right by my house and made a good connection with the owner. He gave me a free pass to come and check it out and offered me a good discounted monthly rate. I think I am going to go check it out tomorrow. I can’t wait!
I was going to go to the gym tonight but I had a late meeting and ended up getting home a bit later than I had planned. I also plan to try out the new gym tomorrow, so I skipped out tonight.
After more playing with my blackberry, I eventually peeled myself away due to hunger.
Dinner was incredible thanks to this little gem!
Just got this cookbook after hearing rave reviews. Since my diet these days tends to favor on the Vegan scale, I knew I needed this book in my collection.
I skimmed through it last night and knew exactly what I wanted to make first. Plus, I had all of the ingredients on hand.
Sweet and Sour Tempeh with Sweet Potatoes
I followed the recipe but subbed broccoli for the green pepper and added a bunch of Kale. Topped it off with a blob of hummus and hot sauce. (Because just about everything goes with hummus and hot sauce you know)
This was awesome! I loved the sauce and the tempeh almost tasted fried. It rocked!
And on a total whim, I even leaped outside of my comfort zone and did something I rarely do.
I have heard SOOOOOOO much on the Vegan Supercharge Me Cookies and mainly out of pure curiosity over all of the hype, I decided to see what the rave was all about.
Considering the baking process was fairly seamless and the recipe didn’t call for any scary baking ingredients, I tackled this with my fingers crossed.
So they look really good, but I have yet to try one. They are still cooling but I will be taste testing in a little while. I have high hopes but will not hold it against the cookie if I majorly screwed them up. It’s not the cookie’s fault, trust me! This girl can just NOT bake!!!
Okay, time to eat some cookies and catch up on private practice.

How are things going for you this week? For me, life is bueno! Aside from the norm of the tummy woes, but I digress.
I was very happy to be teaching today instead of another full day in the office. That is what I love about my job. I get the best of both worlds- the corporate atmosphere and the classroom. It’s perfect for me!
After reading Kath’s post yesterday on junior high trends, I thought I should join the conformity and roll with the style of the week, which apparently was curled hair.
I haven’t curled my hair in ages, mainly because it takes more time in the mornings and I would rather devote that time to eating and blog reading; however, it was a nice change and I felt pretty.
I guess I should consider taking more time to make myself look pretty tomorrow though. Tomorrow, is a HUGE day for me, as we are having a Grand Opening Celebration at one of the most well sought out school’s in our area. Not only will all of our executive management and CEO be there, but the directors of the school district, the press, and the governor! AND!!! I just found out that I will be interviewed for a piece that the local newspaper is writing on me. Apparently, the reporter was so impressed with my success story of working with the company and where I am today and wants to do an entire article on me! Holy crap!!!!
Another reason I had time to primp today was because I knew breakfast wouldn’t take more than a few minutes to throw together.

You’ve seen this before, since it makes a weekly appearance in my morning eats but I just can’t tell you how much I enjoy it.
After teaching all morning, I worked up quite the appetite for lunch.
I had a new product to try that I wasn’t too sure about but I kept an open mind.
I LOVE Amy’s Burrito’s and Pockets, so when a “wanna-be” burrito enters the scene, I am afraid my biased opinion will overrule. But this was on sale and was gluten and dairy free. ( I have been trying to eat only gluten free and dairy free products for lunch because I don’t want to risk a stomach attack at work.)
Stats were pretty good
Just to be safe, I kept Mr. Newman close by. He always does me right. Plus I think this is the best salsa in the entire world!

So turns out the burrito was a hit! Not sure if I would choose this over Amy’s, but for $1, I would totally buy it again. It was spicy and had a nice smoky aftertaste. I also loved the chunks of tofu throughout. Winner winner burrito dinner! (or lunch in my case)
Okay, now I have to tell you guys something.
Tonight, I had the BEST grilled cheese sandwich I ever ate.
I think you need to brace yourselves for this one….
Sweet Cinnamon Grilled Pear Goat Cheese Spinach Sammie with Mango Chutney and Dijon
That was a mouthful, but then so was this sammie!
The assembly required one slice of TJ’s Whole Wheat Tuscan bread, 1 LC Garlic and herb wedge, 1 TBL Dijon, Handful of wilted spinach, pear slices grilled with cinnamon and agave, goat cheese and mango chutney.

I will never eat another grilled cheese unlike this so help me God. Calling it good would be offensive. This one deserves an entire section of the food pyramid. WOW!

Love that song! Love it even more when it comes on during my morning commute so that I am able to crank up the jam and belt my little heart out.
Oh yes, it happens and I am sure I look ridiculous, but nothing makes my Monday mornings more enjoyable than a dance party in my car.

Overnight Pumpkin Oats
I have decided to make Monday’s an oatmeal day. But since I really don’t have the time to make or clean up stove top oats, I find that the method of doing overnight oats is just as pleasurable. I have time on Sunday night to do the prep, and come Monday morning, all I do is pop it in the microwave and add the toppings. Who wouldn’t want this reason to start the work week?
Last night, I combined, 1/4 Cup Oat Bran, 1/4 Cup Pumpkin, 1/4 Cup Soy Milk, 2 TBL Vanilla Chobani, Cinnamon, flax, maca, and chia and frozen blueberries.
This morning I heated in the microwave for 2 min and added the following….
Two new products for me, both which I LOVED! Any new flavor of The Peanut Butter & Co. is always a winner (I think I have every single jar of all of the flavors in my pantry at this point) and the Crofter’s Superfruit Spread was something I have been so excited to try.
I also added more blueberries, dried apricots, and coconut. This was a spectacular bowl!
Work was great today. I had a wonderful meeting with my supervisor and she told me how impressed she was with my work. Nothing like some good old affirmation to start my day.
I spent another day behind the desk getting some more deadlines accomplished. Once lunch time hit, I was more than ready to avert my bum from the confines of my cube and high tail it home for a warm bowl of leftover stew.
Leftover White Bean Sweet Potato Stew with Greek Yogurt and Cholua
Oh my goodness, was this ever good. The stew was so thick and tasted even better than it did last night. I love a soup that requires you to chew. I never feel quite satisfied with sipping a bowl of broth as an entire meal, but now this is something I could make a meal out of.
And I did, with the few additions of some carrots, grapes and a couple Food Should Taste Good Potato and Chive tortilla chips.
After work, Toly and I vowed to get down and dirty with another woman. Haha, no no no, not like that you dirty little peeps.
We haven’t done a Shred session in weeks, and it was time to rekindle a date with the master of Shred herself, Jillian Michaels.
It was rough, it was tough, but we managed through it. Boy, after a few weeks off from this one, your body forgets how intense these 20 min of hell are.
Glad we did it, because after feeling like a bloated balloon for most of the day, a little cardio was exactly what I needed to help me deflate.
And then I was ready for more food.
On the menu were these little jems that I picked up on sale at the Health Food Store.
Now I am not a big fan of pasta unless it’s stuffed with something. Stuff it with tofu and veggies and I’d say that is about the most love for a pasta I am going to find.
Toly was of course, overjoyed to try these Soy Veggie Tofu Raviolis!!!!
Okay, I lie. But he was excited to have his cheesey pasta with meatballs and covered in more melted cheese.
Now, I think we can all agree that my plate was much more vibrant.
Tofu Ravioli with Roasted Veggies in Basil Marina with Melted Goat Cheese
The Ravioli were fantastic! If you have not tried these yet, I promise you, it’s worth a try. The roasted balsamic veggies were incredible and I loved the Trader Joe’s Basil Marina Sauce. And I even had my version of a “vegetarian meatball” (ask Caitlin likes to call them) with some Brussels thrown into the veggie mix.
A big plate of veggies and tomato sauce is one of my favorite comfort meals.

Good news! Sammy is back to his normal self.
Last night, I made him some chicken and rice and mixed it with his food. He immediate ate it and then went back a few minutes later to polish off his food and gulped down a bowl of water.
He has been perfectly fine today, so I guess he must have just had a little bug yesterday. See, a good dose of healthy food and rest is all he needed. I know that if we would have taken him to the vet they would have given him shot after shot of things he didn’t need on top of numerous drugs that mommy and daddy would have spent an arm and a leg on. Last time we took him to the vet because he stopped eating, the vet gave us $150 eye drops and said that he needed a professional dental cleaning for $500. Seriously?!?!?!
I love my pup more than life itself, but I don’t even spend that kind of money on my own cosmetic procedures.
Today was gloomy and rainy and a perfect day to spend in the kitchen. Something about cooking on days like these is just so alluring to me.
So on that note, I have a few recipes to share with you. I realize it’s been awhile since I’ve actually posted a recipe, so this is for your eating and viewing pleasure.
Cinnamon Vanilla Pear French Toast
Ingredients (Serves 2)
- 4 slices of Whole Wheat Cinnamon Raisin Bread
- 1/2 Cup Unsweetened Vanilla Soy Milk
- 1/4 Cup Egg Beaters
- 1 TBL + 1 Tsp ground cinnamon
- 1 TBL ground Flax
- 1 Red Pear, sliced
- 1 Tsp agave
- 2 TBL dried cranberries
Sautee the pears in a skillet and sprinkle with 1 tsp of cinnamon. After the pears are browned and slightly soft (about 10 min) add the agave and let them cook down for another 10 min.
Next, mix the milk, egg, cinnamon, and flax in a shallow bowl. Submerge the bread in the liquid and let soak for about 5 min.
Place the bread on a hot griddle or skillet and DON’T TOUCH! This is the key to having a perfectly golden crust on the toast. Let the bread cook for about 5 min before you flip.
Plate the bread and top with the sauteed pears. Lastly, sprinkle with dried cranberries and drizzle with almond butter. I like to put the entire plate in a warm oven so that everything melts.
You can also top with vanilla yogurt and maple syrup, which is exactly what I did. Trust me, the toppings make the toast!
I ran to the store after breakfast and conducted one of my favorite chores….grocery shopping. After a few hours of shopping, cleaning and organizing food for the week, I was famished for lunch.
TJ’s Vegetable Masla Burger on wilted spinach with Mango Chutney, Sabra hummus, and Cholua
I LOVE these burgers. I also love roasted acorn squash and have fully decided that squash is the one vegetable that would be the one I would live off of if I had to make a choice.
Dinner tonight was one to go down in the books.
I have been craving a nice homemade stew and after sorting through a few recipes, I came up with one based on some inspirations and my own inclinations.
Sweet Potato White Bean Kale Stew
- 1 MASSIVE sweet potato (or 2 regular sized), peeled and diced
- 1 small onion, diced
- 1 TBL Minced Garlic
- An array of spices that I did not measure (chili powder, ginger, cinnamon, rosemary, caraway seeds, smoked paprika, thyme, salt and pepper)
- 1/2 Cup of Veggie Broth
- 1 cup light Coconut Milk
- 1 can of Cannoli Beans, undrained
- 1 jar of Trader Joe’s Fired Roasted Salsa (could also use fire roasted diced tomatoes undrained)
- 1 small Zucchini, diced
- 3 cups of chopped Kale
Sautee the onion and sweet potato in garlic until onion is translucent and potato is browned (about 8 min). Add all of your spices and cook down for another 3 min. Add the beans, zucchini, salsa (or tomatoes), broth, and coconut milk. Bring mixture to a boil. Reduce heat, cover, cook on low for 30-45 min. Add the chopped Kale during the last 10 min of cooking.
This stew was sensational! Thick, hearty, a tad spicy, creamy. Everything I could ask for in a stew.
I added a dollop of Greek Yogurt which made it even more creamy!
Served with a side salad and a slice of TJ’s Whole Wheat Tuscan bread with White Bean Basil Hummus

Our little pup is under the weather. I started noticing something wasn’t quite right yesterday morning. He was acting strange, not moving around as much, not eating, and breathing funny.
Today, hasn’t been much better. He still has not eaten anything, hardly drinks, is laying around in unusual areas of the house (like random corners on the floor) and is shaking hard core.
We called the vet and they said he could have a fever. They told us to take him to the Emergency Pet room if it gets worse, but I think we are just going to keep an eye on him, try to get him to eat some rice and have him rest for now. He doesn’t appear to be in any pain, just tired.
I feel that whenever we take Sammy to the Vet, it’s just another excuse for them to overload us with 10 different medicines and things that he doesn’t actually need. I have had my fair share of untrusting doctors, and part of me feels the vet is no different. Just a way for them to make a profit.
Speaking of relentless doctors, I have had it up to HERE with them. For the past year, I have been to doctor after doctor who doesn’t seem to care nor understand. Honestly, they have only been making things worse and I feel like I am doing a better job a self diagnosing and treating myself.
I made a trip to the Health Food Store today after reading up on what supplements and nutrients that my body has been lacking due to the stomach issues. I ended up talking to the pharmacist there for awhile. She was GREAT! Finally someone who listened to me and offered advice and help that actually made sense for me and my body. Go figure! She suggested that I may have a condition called Candida, which is a build up a yeast in the intestine that is usually a result of antibiotics and birth control (two things I have been on for a very long time). She suggested I start taking a HIGH dosage of Pre-biotics that will dissolve in the intestine rather than just a supplement that doesn’t break down as well. I’ve been doing some research on Candida and it seems to really make sense to what has been going on. I am going to read more about it, but I was truly enlightened. Knowledge is the best form of treatment and it may be simple things like eliminating sugar, taking more natural nutrients, and staying away from yeast, wheat and anything refined or processed.
Anyways, that being said, I’ve been feeling a lot better, so I am just going to stick with what I am doing because honestly, I know my body better than anyone. The colonoscopy will tell me more, but until then, I can only do what feels right for my body.
So, like I said, I woke up feeling better and hungry. Usually, I wake up feeling awful and like I am going to explode, so today, I knew was going to be a better day.
I didn’t wait very long to make breakfast….

Not as pretty all mixed up, but this was pretty fantastic!
After breakfast, I went to the Health Food Store, like I said, and had a wonderful time stocking up on a boat load of nutritious foods and supplements, some of which included, Macca, Chia, Oat Bran, Spirulina, Protein Powder and my digestive “drugs.”
So, the one thing about Candida is that you absolutely can NOT have sugar. Sugar is the number one culprit of every attack (which explains so many of my past attacks). But, being that I am a sugar addict, this habit will be hard for me to break. So, thank goodness for Vegan and Gluten free bakery like the one at The Healthy Grocer. They have some of the BEST cookies, bars, and desserts I have ever had and they are all vegan, gluten and soy free. Perfect!
I saw these and just could not pass them up.
Vegan Pumpkin Mini Whoppie Pies!
I enjoyed a half of one of these babies with a little Pumpkin Power Pie Pudding. (Pumpkin, Vanilla Chobani, Maca, Chia, flax, cinnamon and granola sprinkling)
After I emptied my bank account on holistic drugs, I did some more therapy. Retail therapy that is.
I needed to find something to wear to a HUGE work event this week. There will be press, tv, politicians, and more. I needed to find something that stood out and to my surprise, I did! I’ll have to show you later. 🙂
Another form of therapy today….
Yes! Come Hell or High Water, I could not wait any longer. The 15 min. drive across the river to Chipotle was worth every single bit of crazy Saturday traffic.
I picked up lunch and brought it home for Toly and me. Toly has yet to try this obsession of mine, so I was a little nervous, but I am happy to report, he LOVED his chicken burrito! But then how could you not love some Chipotle?
I ordered my fave!
Lettuce, Black Beans, Veggies, Corn Salsa, and extra Guac. I was in Guacamole bliss!!!!
Does anyone else think Chipotle has the best guacamole, or is it just me? I think they could fill the entire bowl with guac and I would lick it clean!
The Chipotle sat well with me all day.
But just to make sure I wouldn’t suffer a relapse, I continued to cleanse myself while making dinner.
Wine therapy. 100% guaranteed to make you feel better.
I sipped on a small glass while making a creation that I came up with in this crazy little mind of mine.
Ingredients were mostly new Trader Joe’s products inspired….
The end result was Pumpkin Peanut Curry Rice Noodles with General Tsao’s 3 Grain Tempeh.
So very good! I loved the sauces. The General Tsaos was spicy but slightly sweet. And the Peanut Satay Sauce was the perfect base to my Pumpkin Curry Sauce.
General Taso’s is Toly’s favorite Chinese Dish, so the sauce was mainly purchased with him in mind, but I must say, I was very happy I ended up buying this.
His dish was Chicken over Fried Rice.
Who needs take out?
We are now watching White Out. So far, I’m not that impressed, but I was warned this movie wasn’t all its cracked up to be. The hubby has a thing for disaster, end of the world movies though, so I think he is enjoying it.

Oh the weekend! It’s finally here and I am more than ready. For some reason, this week seemed fairly long for only working 4 days; that always seems to happen.
Oh well, it’s over now.
I woke up a little stiff, so I traded a morning run for a lovely yoga sesh.
It was lovely indeed and just what my body needed. Listening to my body when it’s trying to tell me something, like “stretch me out” is quite necessary I am discovering.
After yoga I made a stunning bowl of cereal.

Work was pretty calm today. I didn’t have to leave the office so I was able to get some much needed things done at my desk. Deadlines are creeping up on me for some rather important things, so banging out 8 hours at the desk was needed today.
I came home and felt the need to move after sitting on my bum all day.
Went to the gym, ran an easy 3 miles, and did 30 min of strength. It was intense and I felt wonderful afterwards.
Dinner was a highlight of a new Trader Joe’s product….
Could not WAIT to try these! I always hear you all rave about them and since I have a love relationship with Veggie Burgers, these stood out like a sore thumb.
Even though this is not new to me, I was extremely content to re-stock my supply of Chutney and decided this would make an excellent addition to the Masala Burger.
I was; however, quite devastated to hear that my other beloved flavor, of Apple Cranberry Chutney has been discontinued! The horror!
I also made my favorite side dish.

Awesome dinner! Loved the burgers. Not sure if they outdo my favorite Dr. Praeger’s, but they do come dangerously close.

Now I am about to catch up on Grey’s since I couldn’t even make it to the opening scene last night. Thank goodness for DVR. The only show in my life that I actually try to keep up with and I can’t even stay awake for it.
