Recipe: Autumn Apple Quinoa Salad

Autumn Apple Quinoa Salad

As I was browsing the store the other day, I was drawn to the prepared food bar at Wegmans and the many selections of quinoa salads they had on display.  One in particular caught my eye and I decided to recreate my own version of this fall friendly salad.

Ingredients: 

Serves 4

  • 1/2 C Quinoa
  • 1 Large Apple or 2 Small Apples
  • 1/2 C shredded purple cabbage
  • 1 C chopped spinach
  • 1/4 C Roasted sunflower seeds
  • 1/4 C dried cranberries
  • 1 T Apple Cider Vinegar
  • 1 T Honey
  • 1 T Lemon Juice
  • Salt and Pepper
Directions: 
Cook quinoa and set aside to cool.  Combine all ingredients in a large bowl.  Add quinoa and mix.
I ate this on a bed of mixed greens with the addition of avocado and honey goat cheese.

looks delicious! i love snapping a quick photo of the prepared foods bar at whole foods and attempting to recreate at home.

Ah, I so wish I was!! :( Are you going? We already took a trip to CA this year which was pretty big so I’m sitting out on another one but I would have loved to go.
