Just wanted to pop in quick to say hello.
We are having a fairly low key weekend with some fun little adventures thrown into the mix. Tomorrow, I’ll be preforming my final assessment for my RPM Certification which requires me to tape myself teaching a class. Ain’t no thing! 😉
Yesterday I lived a dream of mine that I wish I could experience more often. Breakfast ALL day!
It’s no surprise that breakfast is my favorite meal and I honestly would try and eat it at every single meal if oats and nut butter were the only acceptable forms of nutrients. Either way, let’s get back to yesterday.
Breakfast # 1
Cold cereal with fruit, granola and nut butter. A reliable favorite.
This was good, but it only gets better.
Breakfast # 2
I was working in Lititz all morning so a few co-workers and I decided to grab lunch downtown in the square. Lititz is such a fun little town. Quaint shops, eclectic restaurants, and old town charm.
There has been one place on my list for awhile now after a friend told me it was a must try in this town.
The Tomato Pie Cafe claims to have a simple but artful menu. Featuring urban style menu items for breakfast and lunch and a full espresso bar filled with tons of delicious drinks and baked items.
It was so hard to decided on what I actually wanted because I wanted it all. But when I glanced at the specials and saw The Pumpkin Cali Bowl, it was a done deal.
This was more like a bowl of oatmeal. The granola was creamy but hearty filled with oats, barely and pumpkin seeds.
As if this wasn’t fantastic on its own, I told you it only gets better.
I couldn’t help myself on this one. It just sounded too amazing to pass up and when I saw I was able to order a 1/2 size, I jumped on the opportunity.
This meal was amazing but hello carbo-loading! I was filled to my brim for the entire day.
Immediately after I ordered this, I remember I had dinner plans with Jen later on and that she was planning to make pancakes. Gosh and really does keep getting better.
Dinner # 3
I arrived to Jen’s as she was flipping a batch of Oatmeal Pumpkin Pancakes for us to enjoy.
Jen knows that pancake eating is a serious event. The topping bar she put together confirmed this. Homemade granola, coconut, gingersnap cookies, walnuts, nut butter, greek yogurt, cinnamon, agave, honey.
I went with a little granola, coconut, walnuts, cinnamon and some greek yogurt on the side, all drizzled with some sweet agave.
And my contribution for the BFD Girls Night….
