Making Dreams Come True

Hello friends!

Wrapping up another fall weekend as we are well into the month of October already.  The days are getting shorter, the air is getting cooler, and I am getting a bit more relaxed with a not as chaotic schedule.  We’ll see how long that lasts.

The weekend was pretty laid back.

Saturday, after teaching RPM and taking a few strength classes at the gym, I ran some errands and came home to pick Toly up for his surprise.

One of my husband’s life’s dream was to drive a classic car.  He talks about it all the time and gets that shiver down his spine every time he spots one on the road.  A good friend of mine happens to work in the car business and asked if Toly would want to drive one of his cars in a parade this weekend.

Let’s just say this was one of the happiest I’ve seen him.

It just happened that he was able to drive a beautiful 57 black Caddy down the streets as people admired him the car in all its glory.

We decided to keep it low key for the rest of the day and cooked an easy dinner at home.

One of my favorite blends.

On the menu was pizza.  I decided to amp up a frozen Trader Joe’s pizza (roasted veggie, cheese-less) with some roasted butternut squash, spinach and goat cheese.

Salad accompanied.

We ended our peaceful night with a movie and some homemade individual apple crisps that I whipped up.  It was wonderful.

Today, I a big day to look forward to.  I was performing the final piece of my RPM certification by taping a special session of my class.

Pumpkin French Toast

Toly was so sweet and came to support me.  He has never taken a spin class in his life and did great for a rookie.  The entire taping went great!  Now I just send it to the company and they either give me a thumbs up or tell me I have to work on some things before I am official.  Based on how it went today, I’m feeling pretty good about being cleared.

We got home in the afternoon both starving after a killer workout. Some of us had a little trouble walking. ;)

I used a piece of my leftover pizza to make a beast of a salad.  My favorite way to eat leftover pizza is this way.  I like to call it pizza croutons.

The entire salad consisted of romaine, carrots, radish, sundried tomatoes, avocado, hummus and “pizza croutons.”

After lunch, I cleaned, trying to drown out the screams from my belligerent football loving husband.

Dinner was up in the air until I remembered I bought a block of tempeh I had nearly forgotten about.

The sauce is what makes this dinner.

Pomegranate Balsamic Tempeh over Butternut Squash Quinoa

Ingredients:

  • 1 package tempeh
  • 1/4 C plus 2 T balsamic vinegar
  •  1/4 C plus 2 T pomegranate juice
  • 2 T honey
Marinate the tempeh in 2 T of balsamic and 2 T of pomegranate juice in the fridge for up to 4 hours. (I started marinating mine at 2:00pm and cooked this around 6:00pm.  The longer you can reserve to marinade, the better)
Heat a skillet and add the tempeh.  Brown on one side (around 6 min) flip and brown other side.
Meanwhile, in a small sauce pan, add the remaining ingredients and bring to a boil.  Let the glaze reduce for about 10 min.  Pour glaze over tempeh.
For the quinoa, I simply cooked squash in a large skillet until soft.  I then added a 1/4 C of dry quinoa and 1/2 C of water.  Cover and let this cook for 15-20 min.  Add in cinnamon, salt, pepper and dried cranberries.
The quinoa didn’t cook as I had hoped but it was still good. Next time, I think I will cook the quinoa separately and add in the squash.

I bet your tape is awesome – I’d love to be in your class! I always think it’s fun to see friends and significant other’s reactions to our workouts when they try them the first time. My boyfriend’s speedy but he has no idea why I love running halfs so much.

congrats on your RPM taping! Maybe I get to take a beginners class with u one day- would love to! :) and your salads so so delicious as always. what is the number one thing you have to have in a salad every day? I am wondering if you actually have a veggie item that you rely on the most.

eeks I would be so nervous about being taped! It will be worth it though, good luck!
My husband would love to drive a classic car too, he is very into cars – both classic and muscle.
I love your pizza croutons, that is definitely something I’ve been missing in my life. Sometimes I just don’t eat my pizza leftovers because I feel like I’ve had enough, but this could work for me.
I hope you work up the courage to write the posts you want to write this week. It took me two tries to get one out last week, but eventually I got there :) Writing always makes me feel better, even if it’s just on paper. That works too.

Pizza croutons are such a good idea! Love it! :) I’m with Toly–classic cars are just too cool. I would love to drive a ’67 Shelby GT500 like Eleanor in Gone in 60 Seconds. lol!
