The week before Christmas is supposed to be a joyous time of year.  For some reason I just expect people to be happy this week but most of the time that is simply not the case.  The older I get, the more I realize how people are just angry when life gets exciting.  Busy = stress.  This year, I’m not really stressed.  Life is actually pretty crazy right now but I’m unusually calm about everything.

Breakfast

Last night I made a quadruple batch of pumpkin steel cut oats and placed them in the fridge to eat and enjoy all week.  I’m not sure why I don’t do this more often.  I am loving hot oats in the morning but never seem to want to go to all of the trouble of making them on the stove.  All I do here is portion out a bowl, heat in the microwave and add the appropriate toppings.

Blackberries, Sunflower Butter, Pumpkin Butter, Pumpkin Granola

Last night I also prepped lunch for the week by making a big batch of White Bean Kale and Squash soup.

 

White Bean Kale and Squash Soup 

Ingredients

  • 1/2 Buttercup (Kabocha) squash, cubed (I leave the skin on but you can remove it)
  • 3 large Carrots, peeled and diced
  • 14 oz can White Beans
  • 1 bunch Kale, chopped
  • Rosemary (2 tsp dried)
  • Salt and Pepper
  • 2 cloves Garlic
  • 4 cup Veggie Broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp curry powder
Directions:
Combine everything in a slow cooker.  Cook on high for 4 hours or low for up to 8 hours.
This turned out quite delicious for not really having a clear recipe in mind.  I just made this one up on a whim and it worked for me.  As usual, it was even better then next day.
I’m 99% done with my shopping and close to being done with the wrapping.  I would have finished last night but I ran out of wrapping paper and became highly annoyed.  I’m more of a gift bag kind of girl anyways.

Dinner

It’s no surprise that my favorite meals are usually big loaded salads with some kind of seafood.  I think I may have dreamt about this salad last night because I was thinking about it all day long.

Honey Glazed Pomegranate Scallop Salad 

Where do I begin?

From the bottom up:  Arugula, purple cabbage, sliced pear, avocado, pomegranate arils, roasted brussels sprouts, honey goat cheese, and seared scallops.

The icing on the cake was the glaze I made by combining equal parts of balsamic and pomegranate juice with a touch of honey.

I love scallops.  Not quite as much as salmon but they come in second.
Even though the lines are long, traffic is a nightmare, and the stores are a complete mess, it’s still the most wonderful time of the year and that is exactly how I will choose to see it.

I LOVE scallops but never have them at home as my husband is allergic to seafood. Your salad looks delicious and yes, I finished Christmas shopping about three weeks ago!

oh wow do those meals look amazing!!! i JUST finished my christmas shopping this weekend and the stores were INSANE! it still was nice to be out and about…who doesnt love christmas music blaring and crazy christmas sweaters all over the place :-)
cant wait for next week and our lunch outing!

Such lovely dishes :) Your salads are always so pretty. And the soup sounds simply amazing. Warming, comforting…ah! People do seem to get super stressed this time of year. I have one thing left to get- a gift certificate that I’m going to get tomorrow night. Otherwise=done!

I’m finally feeling the spirit more. I admit that the past 2 weeks have been so full of busy and stress that I didn’t have much of the holiday cheer going on. Now? I’m past it and really feeling it. It feels good. :)

I did the majority of my Christmas shopping online. It was the best. I picked up a few things at stores, but I was able to walk there so parking wasn’t an issue. :-)

Although this year I’m not totally feeling the Christmas spirit. It’s weird.

I did all my Christmas shopping these past few weeks, mostly online. It was great, but I do enjoy the crowds, it just goes with the season!
Right now in my life I don’t see why busy always equals stress, but I do see it all around and I wish people would just relax and enjoy the season for what it is! :)

I finished most of my shopping in the UK. My brother is the only person left to do, but I’m “going in” with my parents gift and thus am completely done =)

I adore scallops, but we can never seem to find good ones at this time of year in Ontario! Hmmm. On the list for a scavenger hunt tonight :)

I make such a similar soup: lima beans, kale, butternut squash, and mushrooms. Its one of my favorite, easy cold night meals
