And a happy Monday is was indeed.
For one, we had off work. I always feel so spoiled with this stretch of three day weekends but I know they will shortly come to a long halt over the next few months. One more next month though!
Even though Toly and I both had off work, neither of us were able to sleep in. I had a very early mornings doctor’s appointment and Toly came with me today.
After it was over, we treated ourselves to breakfast at The Hershey Pantry.
I ordered the egg whites with multigrain toast. Funny story about this picture….
We were seated directly beside a big bright window and the sunlight was beaming directly on my plate. I was thrilled with the light opportunity and quickly whipped out my camera (like any reasonable food blogger would do) to snap away. Well at that exact moment, the woman beside me came rushing behind me and closed the blinds. I guess she didn’t appreciate the bright sunlight gushing in her face as much as I did.
Anyways….getting back to the breakfast. Guess who is now has jumped on the baked oatmeal bandwagon?
He was talking about it all last night and said he dreamt about ordering it today. (coming from an oatmeal hater, this is saying a lot)
But come on…how could you not dream about this….
We split it for a glorious breakfast dessert.
After breakfast, I had yet another doctor’s appointment with my dermatologist. Apparently, I didn’t realize today was a holiday when I scheduled all of these because I didn’t plan on wasting half my day off being poked and prodded.
Thankfully, I got done with everything pretty early and was in the gym by 11am.
After a good workout, I came home and ate a light lunch of leftover spaghetti squash, kale, turkey meatballs, nutritional yeast and tahini.
Definitely hit the spot.
It honestly felt so great to have this extra day. Since I did most of everything I needed to do over the weekend, I felt as though I had nothing to do which comes so few and far between these days.
One thing I did remember to do that needed to be done but gets overlooked way too often was give Sammy a bath. As soon as I suggested the idea to Toly, he was all for it. Sammy on the other hand….
This was his expression when he thought he heard us toying with the idea. The conversation went like this.
L- “Do you want to do something we haven’t done in a very long time?”
T- “This could go one of many ways but I’m interested.”
L- “We should probably do it now while he’s not looking.”
T- “Yeah, he doesn’t need to see this.”
L- “Okay, you grab the towel, I’ll get the soap.”
T- “Well this is new….but again, I’m interested.”
L- “I’ve never seen you this excited to give Sammy a bath.”
T- “Right! Sammy needs a bath…that is exactly what I was thinking.”
“Uh oh, he heard the B word!”
“Please don’t do it, please don’t do it!”
“Crap, they did it.”
Not looking very assumed but smells like a peach!
After the bath excitement, I really didn’t do much of anything for the rest of the afternoon but some laying around and blog work. At least I finally got around to making that 7 Days of Salad Series post I promised. I also made a sidebar icon so that you can find it easier.
Speaking of salads, I was at Panera a few days ago and was thrilled to see the Mediterranean Salmon Salad back on their menu.
In theory, this salad sounds wonderful.
“A chilled Atlantic salmon fillet is the star of the salad. Feta cheese adds creaminess. Baby Kalamata olives bring a perfect touch of saltiness, and sliced almonds offer a distinctive crunch. Citrus notes are courtesy of mandarin orange slices, and the Honey Tangerine Vinaigrette brings just enough sweetness to the mix.”
Well when I ordered it, it was a little less ideal than what they explained. Mine came with mostly butter lettuce, a few measly caned mandarin oranges and some almond silvers. They forgot to add the feta and olives. The salmon was decent but I asked for the dressing on the side and they of course did not do this so my salad was swimming in dressing that tasted quite artificial. Not really my thing.
Tonight, I attempted to make my own version of this.
Mine indeed contained olives, feta, fresh orange segments and pan seared salmon but I took it a few steps further by adding avocado, roasted brussel sprouts, edamame and cucumber.
As for the dressing….
Simple balsamic and edamame hummus.
Take that Panera!
So today was quite wonderful on a whole. Even though it’s back to work tomorrow, I’m hoping for a fast week because I’ve really filled my weekends with so many fantastic things this month. Looking forward to the next one already.
What is your go-to order from Panera? I usually go with the 1/2 Mediterranean Veggie Sandwich 1/2 Black Bean soup combo but I do enjoy their salads…so long as its more than a big bowl of cheap lettuce.
