Happy Monday to you!

Instead of a regular post, I thought I would switch things up this Monday and offer a few new recipes instead.  What is better than starting your week with some cooking inspiration right?

First, the one I promised from last night…

Greek Turkey Burgers

Ingredients: 

  • 1 lb. ground turkey breast
  • 1 zucchini, grated
  • 1 T minced garlic
  • 3 T sun dried tomatoes
  • 4 oz reduced fat feta cheese
  • 1 egg white
  • 1 tsp dried oregano
  • salt and pepper (to taste)
Directions: 
Mix all ingredients in a large bowl.  Shape into patties (about 4 inches wide, 2 inches thick) and place on a foil lined baking sheet.  Broil on one side for 7 minutes, flip and broil on remaining side for an addition 7 minutes.
Serves: 6

Calories: 156, Total Fat: 3.5g, Sat. Fat: 1.5g, Carbohydrates: 3.1g, Protein: 24g
These were delicious!  The egg and zucchini keeps them super moist and the cheese and sun dried tomatoes adds a ton of flavor.  You can enjoy these in the traditional burger form with some fresh spinach and tomato or you can do as I did and make it into a wonderful salad.
Next up, a new favorite when it comes to fried rice.

Pineapple Quinoa Fried Rice

Ingredients: 
  • 2 C cooked quinoa
  • 1 small red pepper, diced
  • 1/2 C asparagus, chopped
  • 1/2 of a zucchini, diced
  • 2 T minced garlic
  • 2 T soy sauce
  • 1 T mirin
  • 1 can diced pineapple (in juice)
  • 1/4 C edamame
  • 2 eggs
  • salt and pepper to taste
Directions: 
Heat a large skillet.  Add the veggies and garlic, season with salt and pepper and cook for 5 minutes.  Add the cooked quinoa and let it brown in the pan for an additional 3-4 minutes.  Add the soy and mirin sauces and mix well.  Add pineapple and edamame and stir.  Make a large hole in the middle of the mixture and crack the eggs into the center.  Let the eggs set for a minute or two and mix all together.
Serves: 4

Calories: 251, Total Fat: 5.9g, Sat. Fat: 1.1g, Carbohydrates: 39g, Fiber: 5.9g, Sugar: 6.7g, Protein: 12.3g
You can certainly eat this on its own or you can add another protein such as shrimp or chicken.

I actually liked to much better than rice. It gets more crispy and delicious!

i literally just made that exact turkey burger for dinner!! minus the zucchini. i also added in a little ricotta which was delicious.

that quinoa fried rice looks amazing!

I love these ideas! and this may sound really weird, but I am obsessed with adding spaghetti squash to my salads right now. I especially love it paired with an asian dressing and some shrimp and extra veggies because its almost like a nutrient-packed “noodle” salad. so delicious!

Not weird at all! I add it to my salads all the time!! Try using Kale for the lettuce and you have yourself an even more nutritional powerhouse.

Lauren, have you ever tried Fish Sauce?! it’s SUPER high in sodium but it’s such a special little treat that one can pick up at the local asian market! Both of the recipes look delicious! Loveee how versatile both turkey and quinoa are and can absorb almost any flavors! One of my fave quinoa dishes mixes roasted corn + black beans + avocado + salsa… Super creamy!

I am totally making both of those recipes as soon as possible! Last night I made a simple recipe using leftover salsa that worked out nicely: Salsa, chicken, corn, black beans, onions, lemon juice and cilantro. Mix it up in a pan and enjoy!
