{WIAW} New Favorites

Hi everyone!

Is anyone finding this week to drag a bit?  Just me?  Well, regardless, the end is in sight now and I’m definitely looking forward to Friday for many reasons.

Since it is Wednesday and I haven’t graced you all with a WIAW post in awhile, I thought I would go ahead and do just that tonight.

Breakfast

I made the oats ahead of time so all I had to do was pop them in the microwave to heat and this breakfast was put together in less than 5 minutes.

 

Lunch

Quite possibly my favorite salad these days. (I think I said that yesterday but I take it back because this one rules!)

  • Massaged Kale (balsamic vinegar, lemon juice)
  • Spinach
  • Roasted Brussels Sprouts
  • Avocado,
  • Edamame
  • Sunshine Burger
  • Hummus

The hot sauce came pouring on after the photo.

I think the mint Tazo is even better than the lemon grass. The label does not lie either, this tea is definitely refreshing.

Dinner

I had RPM practice tonight and didn’t get home until late.  Toly was also out playing basket ball so I was on my on.  My top rated single girls dinner will always be eggs.  I remember working late in college and coming home at 9pm to make a big omelet for dinner.

Not quite an omelet tonight but just as good.

  • 1 egg, 2 egg white scrambled
  • whole wheat english muffin with jam
  • strawberries (added mainly for eye appeal)

Oh this dinner never fails me.  I kind of want it all over again.  Perhaps tomorrow night though because it is now time for a little dessert.

I think I may tap into this little stash that was waiting for me today…..

i am feeling the saaame way about this week. its taking for. ever. my favorite thing i ate today was the new apple cinnamon chobani with frozen banana & plain jane granola…it was closing in on perfection!

Chobani! The new flavors are awesome. The apple cinnamon is my fav. You always make me crave brussels. ;)

that salad looks soooo delicious. literally all of my favorite things in a bowl!

the best thing i ate today was a huge bowl of brussels sprouts with homemade hummus. and the big ole almond butter spoon that followed.

tazo makes a Lemon Grass tea?!?!? Where have I been! I just make my own with my lemon grass stash :) its in the freezer, keeps better :)

Oh my goodness you’re in Chobani heaven over there!! I have to say I’m a fan of the apple cinnamon and the passion fruit (my faves!!).

The best thing I ate today was, by far, peanut butter cup trail mix from Trader Joe’s!! How did it take me this long to discover that beautiful combination?

Best food today ? well, I just woke up and had a breakfast soooo Breakfast ! (oatmeal made with strawberry flavored soymilk, coconut, sliced banana and sliced almond)

Not sure if you tried it yet, but massaging avocado into the massaged kale is so delicious!

How do you make “steel cut” oats? Do you take up 1/4 cup dry? And what is an appropriate amount of almond milk, water, and chia to add to them so they come out decent? Ratios are hard to figure out.

oh, and what english muffins do you like? I’m trying to find a gluten-free kind. Ever try the gluten-free “food for life” multiseed or brown rice i think they come in?

I love the Rudi’s Organic Whole Wheat but these are Van’s Multigrain (they were on sale)- they’re good but not as good as Rudi’s.

Hey Tara! I use 1/4 C steel cut oats, 1/4 C water, 1/4 C almond milk and usually 1/2 of a banana or 1/4 C canned pumpkin.

I agree, this week is draaagggiinngg! But it’s Thursday, which means tomorrow is Friday :) Plus I ate some peanut butter puffins and those will make anyone smile!

I love your lunch. I have all of those ingredients on hand, so I might make it for my lunch! The best thing I ate today was overnight oats made with kefir. I added bee pollen, berries, and an almond butter spoon. Yum!
