Is it possible to make no-bake granola? Is it when you attempt to make no-bake granola bars that amount to a pile of crumbly pieces. This past weekend, I tried to make a batch of my Apricot Cherry Almond No-Bake Granola bars and well…..you get the picture.
So while these didn't exactly come out in the bar form, I was determined to salvage a perfectly good batch of sticky oats and dried fruit and called it granola.
Apricot Almond Granola (No Bake)
Ingredients:
Dry:
- 2 cups dry rolled oats
- 1 cup brown rice cereal
- 2 tablespoons chia
- 2 tablespoons flax seed meal
- 1/2 cup chopped dried apricots
- 1/4 cup sliced almonds
Wet:
- 1/4 cup almond butter
- 1/4 cup apricot preserves
- 2 tablespoons coconut oil
Directions:
Mix dry ingredients in a large bowl. In a separate small bowl, combine wet ingredients. Microwave for 30 seconds. Add wet ingredients to dry and stir. Place mixture in a shallow pan and refrigerate for 1-2 hours or until set.
I store this in the fridge to avoid it from getting soggy. If you like a chewy soft granola, this is for you. So apparently not all of my cooking mishaps result in a total loss.
It's always good to look at the glass half full and realize you can still make granola from granola bars.
