Over It {A Recipe Post}

I have no idea what we've done to deserve this weather, but I'm in awe of how gorgeous it has been for the past week.  The good news…it's only getting better.  Needless to say, I've completely banned all of my sweaters and put my winter coats into exile.  Maybe a little presumptuous on my part but I'm willing to take my chances. 

I had a crazy day (what's new) so rather than bore you with the less than exciting details, here is a recipe instead. 

I've made this one a few times before but it's absolutely one of my favorites, thus I keep going back to it. I figured it finally deserved it's own spot on the recipe page. 

Quinoa Black Bean and Mango Salad 


  • 14oz can black beans preferably organic no salt added
  • 1 ripe mango, peeled and diced
  • 1 red pepper, diced
  • 1 small avocado, diced
  • 1/2 cup cooked red quinoa, regular will work too
  • 2 tablespoons lemon juice
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cilantro
  • salt and pepper


Combine all ingredients in a large bowl. Mix to combine and serve. 


You can easily eat this on its own…or you can kick it up a few and make a substantial dinner salad with it like I did. 

Tonight's dinner: 

Quinoa Black Bean and Mango Salad, Grilled Squash, Grilled Mahi Mahi Burger, Salsa and Yogurt on Greens 

I was quite impressed with this but a little more impressed with Toly's fish tacos.  As good as this was, I found myself a little jealous because his might have looked a tad better. 

Either way, we were both fully content with our delicious dinners. 

Especially because we were able to enjoy them dinning al fresco. In the second week of March…unheard of! 


{Sigh} I am so over winter.

    We were thinking about grilling tonight, but ended up going for a run (well, mostly a walk 'cuz it was hubby's first time out w/me and he couldn't hack it, haha!) instead that tired us out!

  5. I'm thinking winter is gone luckily! At least the 10 day forcast i looking pretty promising!
    And I love your post the other day, good for you for realizing its ok to have some extra weight. A womans body really is designed to carry a little more fat than a mans. Personally, I got pregnant both times when I worked out a little less and ate a little more. Now after having 2 babies, I am often critical that my stomach isn't flat enough but I need to accept that its carried 2 babies and the second one is only 7 months old. why in the heck are us women so critical of ourselves?? the million dollar question!

  7. gosh those meals look amazing! u cant find black beans in cans here but have a bag of dry ones at home. might have to start soaking them to recreate ur amazing salad!

    I am over winter too!! Once I stop wearing my winter coat for a few days I refuse to break it back out again!  I will just suffer through any cold spells we get!  That salad looks amazing!!!
