Cooking in Pearls

Well, you all totally get me and that is one of the many reasons why I continue to pour out of heart and soul.  After last night's ramble, I was so pleased to hear that many of you often go through the same thing and even better, you all had some wonderful suggestions on healthy ways to clear your head when your faced with some heavy decisions.  A few of my favorite: 

  • Go for a long walk
  • Go for coffee with a friend and talk it out
  • Listen to music 
  • Escape for the weekend 

Love it!  I am going to try all of these in hopes I'll find some clarity in the next few weeks.  

In the meantime, I'll continue to drown my sorrows in pints of Ben and Jerry's, which by the way is fantastic since so many of you asked. 

The past week, I've decided to reach out to my good friend and personal trainer to help me with some exercises that I can do while I'm recovering from my foot injury.  I knew that if I tried to rehab on my own, I would probably damage myself more so I did the expensive smart thing and hired help. 

I met with my trainer this morning and remembered why I love working with him.  He pushes me harder than I would ever push myself on free weights.  I have been feeling it all. day. long. 


Raw Oats, Berries, 1/2 a Banana, Peach Chobani, Muffin Piece, Almond Butter, Chia 

Look at that..the sunlight has returned for breakfast!  Today is the first day I noticed the light and practically fell over in the thought of what this will now do to my am photos. 

I spent all morning in the office working on reports.  Definitely not my favorite part about my job but it has to get done so I sucked it up for a few hours and got everything done. 

I came home for lunch and to a nice surprise on my doorstep. 

A few days ago, Jennifer from My Freshwater Pearls contacted me to see if I would be interested to receiving a pair of beautiful fresh water pearls.  Funny story, but when I was a little girl, my dad bought me a real set of pearls and I thought they were the uncoolest thing in the world.  To a 10 year old girl, pearls were something only my grandmother wore.  Today, I kick myself for not being more appreciative because pearls are one of the most beautiful pieces of jewelry I have. 

I was more than happy to receive a set of Simply Pure 8-9 mm freshwater Pearl Earrings to add to my collection. 

Right away, I was drawn by the color.  A soft pink that is subtle enough to wear with almost anything. 

They are the perfect size too!  For someone with small ears like myself, I'm always looking for posts that don't overpower my lobes.  These are just right. 

Thank you Jennifer for such a thoughtful gift.  Even though my birthday is next week, I considered them an early present.

With one single slice of pizza leftover from the past few days, I knew exactly what I would be making for lunch today.  Pizza croutons of course!  

What is pizza croutons you ask?  

Simply one of the best inventions ever!  You take a leftover slice of pizza, cut it up into small bite sized pieces, bake it, and top your salad with them.  Really, it's delicious!  A one-bowl pizza and salad lunch is my kind of meal. 

Dinner was slightly more conventional.  I had a coupon for fish from the store this weekend and as I was browsing, I decided I wanted to go with a fish we usually don't buy often. 

Mahi Mahi happened to be on sale and is one that we haven't had in ages. 


I marinated the mahi mahi in a marinade of soy, teriyaki sauce, honey, garlic and OJ in the fridge for a few hours and had Toly throw it on the grill. 

Sides included Swiss chard, brown rice, grilled eggplant and asparagus. 

Quite impressive.  The mahi mahi is definitely a hearty fish but holds up so well on the grill.  I'm pretty sure the eggplant may have been my favorite part about this dinner though.  I added dried rosemary tonight which totally transformed the taste.  Eggplant is one of those vegetables that just tastes so much better to me on the grill than anywhere else. 

I'm ready for more fro-yo now.  Yeah, that little container isn't going to last long, I can already tell.
