Wow, isn't that the truth! Thank you Of Monsters & Men for reminding me of this today.
By the way, the song I am referring to is "Little Talks" by Of Monsters and Men and it is a fabulous song if you are looking to add one to your iTunes playlist.
I have quite a few things to share tonight so I'm just going to get right to it.
Oats!! Look at that, something in my cereal bowl other than cereal. This batch of oats was quite epic actually.
- 1/4 C Steel Cut Oats
- 1/2 overripe banana
- 1/4 C almond milk
- 1/4 C water
- 1 tsp chia
- 1 egg white
- 2 T cottage cheese (whipped in at the end)
The secret to making a really voluminous bowl of oats is to add the egg white and cottage cheese at the end and whip away. I swear the pot tripled in size.
The toppings were eliciting today because of a new product I snatched from Whole Foods.
My friend told me about this product with me when she discovered it at The Natural Products Expo West and when I saw it on the shelves, I decided to try it for myself.
I love big clusters of granola! But then really, who doesn't? This stuff is loaded with granola coated nuts. It's chewy so definitely not your average crunchy nut cluster, but I actually enjoyed it's soft chew. It will be hard to keep my hands out of this little box I can already tell.
Continuing on with the new products, I also picked up a recommendation from the lovely Cait. This girl makes just about anything look good but when she raved about TJ's Reduced Guilt Battered Shrimp, I knew she must be serious.
So normally, I would pass on anything frozen and fried but again, I trust this girl's opinion so I decided to give it a try.
I made a big spinach salad with cucumbers, fresh mango, radish, avocado and topped it with the shrimp and two more new finds.
Okay, let's start with the shrimp. Again, I don't eat many fried things but for some reason, and calamari is about the only seafood I would eat fried but the shrimp were really good. If I would have ordered this out, I would have preferred them to be grilled, but these are quick and super easy and definitely tasty.
Now the dressing was a total impulse buy from Whole Foods. I bought it mainly to use as a marinade since I don't usually use bottled salad dressing, but it sounded perfect for my salad today. It's wonderful! Sweet but has a bit of kick from the pepper.
And the hummus….awesome! At first, I wasn't sure I would be into the cilantro flavor in a hummus but it's subtle and actually really quite delicious. I still think the edamame is my favorite but this might be a close second.
I wasn't in the mood to think much about dinner so I took the easy way out and pulled out some frozen burgers.
Spinach Feta Turkey Burger, Grilled Eggplant (hummus), Roasted Kale
Nothing was wrong with this meal. Nothing at all.
