A Taste of Summer

What a beautiful beautiful day in the neighborhood.  I'm not sure how it was where you live, but around here, we reached record temps in the 90's this afternoon.  I loved every single hot second of it.  Please tell me you are all as excited for summer as I am! 

With such gorgeous weather, I attempted to make every single meal as "seasonal" as I possibly could.  

Starting with breakfast of course…


I happen to love the contrast of raw oats and cold yogurt.  I also really like hot oats and cold yogurt but when it's warm, I don't even cook the oats.  It's actually really good.  Try it sometime, you'd be surprised.  

Do you know what else I love?  Grapefruit!  I eat 1/2 of one almost every day with breakfast.  Sometimes it gets pictured, other times it doesn't, but just so you know, it's almost always there. 

I headed into the office for a few hours this morning before having to head out to Hershey for an event all afternoon.  The event that I was at is a national high school competition where hundreds of students compete in business related public speaking events.  It's called FBLA (future business leaders of America) and I have been a judge for these competitions for the past 3 years.  It's really a fantastic opportunity and each year, I am blown away by the level of caliber and maturity from a worthy group of high school students.  I like to think I was responsible in high school but these kids are the best of the best.  

Before I went, I rushed home to put together a to-go lunch since I knew I wouldn't have time to eat lunch there. 


Spinach, Banana, Carrot Juice, Vanilla Sunwarrior Protein, Plain Yogurt 

I also grabbed the other half of my wrap from yesterday's lunch (which was surprisingly really really good even the next day), some grapes and the bag of sunshine veggie chips. 

This lunch worked out perfect.  I was able to sip on my smoothie during the drive and quickly ate my wrap while walking into the conference.  I saved the grapes and veggie chips to eat after I was done and on my way to the gym. 

I met with my trainer later this evening for yet another killer upper body routine.  My goal is to do a pull up and I'm about half way there.  Tonight, I was doing assisted pull ups with a resistance band which is the closest I've come so far.  By the end of the summer, I WILL DO A PULL UP!  That is my goal. 


I won't lie, dinner was in my mind all day long.  Partly because I planned ahead and prepped the chicken to marinade all day (I love when I remember to do that) so it was extra flavorful tonight. 

The other part came in when I tried to think of the most summery salad I could think of and this is what amounted….

Grilled BBQ Mango Chicken Salad 

Oh my goodness, let me start with the chicken.  I marinaded it in a mixture of Mango/Coconut Dressing plus BBQ sauce.  The salad was comprised of spinach, mango, strawberries, edamame, grilled zucchini, avocado and feta. 

All beautifully dressed in this new (to me) pomegranate vinaigrette that I picked up from Whole Foods. 

Now if that doesn't scream summer, I'm not sure what does! 

I was thinking of convincing Toly to do a fro-yo run with me tonight as a way to top off this beautiful day.  That is probably the only thing that could make this Monday any better than its been.

What were you like in high school?I was pretty true to myself but I definitely had a "bad" phase that not many people believe.  I tested the waters a few times but luckily it was pretty short lived.

      Oh grilled fruit (or grilled anything) for that matter is just so delicious! I’m pretty sure if I grilled my shoe, I would eat it. :)

    This looks like such a delicious day of eats!  Especially that breakfast – yogurt + crumbled muffin is SO good!

    What a cool event! Very neat that you get to judge. Veggie chips are totally delicious. And that salad looks like an ideal at home dinner for me. In high school, I did really well in school…but I was naughty on the weekends :)

  4. I've never thought of adding carrot juice to smoothies. I'm going to juice some carrots with my juicer and try that out tomorrow!

    That dressing/marinade sounds fantastic!  I'm a big fan of fruity dressing/marinade but Kyle prefers a more savory flavor, mostly BBQ sauce : )  We should meet up for fro-yo this weekend…I'm dying to go!

  6. I was (& still am!) a goody-two-shoes. I always joke that my mom really instilled the fear of God in me! I will need to learn he secrets once I have kids!

  8. I was the choir and math geek, who was in NO way athletic.  Pretty sure I still couldn't play sports well but I'm sure I'd be much better than I was back then! …at least I'd hope so! 😉

    I wish we were  having warm weather here! Its been rainy for the past few. Oh man, in high school I was not the best, I mean I just got into bad situations. Luckily, I cleaned up my act! That salad looks delicious! Have a great tuesday!
