The Weekender {4.20-4.22}

Fantastic weekend was had here! 

Even though I had some things on the agenda, I still managed to keep it rather low key which worked out well considering the next few weekends are filled with work, traveling and other exciting things. 

Friday night, we took my dad out for his birthday.  He turns the big 50 this week so we wanted to do a nice family dinner to celebrate our favorite man. 

It was the perfect night to enjoy our first trip to Dukes this season.  Dukes is a large restaurant/bar that has one of the best outdoor decks.  It sits overtop the Susquehanna River and even though this place is always packed on the weekends, we didn't wait too long for a table. 

Good thing because someone was getting pretty hungry. 

The only bad thing about Dukes is that the food is just okay.  I guess that's to be expected when most people come for the big bar on the deck but that's okay. I ordered the salmon with steamed veggies and a side Cesar salad. 

It looks good but it really was the worst salmon I've ever had at a restaurant.  Again, I would still go back to Dukes for the atmosphere alone, I will just stay clear of the seafood.  Beer and crab pretzels is what you need to stick with at this place. 

After dinner, I introduced the family to the wonderful creation of self serve frozen yogurt.  

Naturally, they all were extremely impressed.  

It was a great night especially since we had the chance to honor my dad.  No one is more deserving. 

Saturday, I had to be at the gym to help out with the launch of our new RPM release.  When I finished work, I ran a bunch of errands and came home to get a few things made for our neighbor who recently had surgery.  

By the time I was finished cooking and after such a long morning, I was exhausted and asked Toly if he would be interested in ordering some take-out and renting a movie. 

Best idea ever!  

We ended up having such a chill night.  

Wine, candles, music, take-out…quite a romantic little set up this was. 

The movie (Friends with Benefits) was actually really funny.  I didn't have high expectations for it because I really really don't like Justine Timberlake's acting but both of us enjoyed it more than we thought. 

I was able to sleep in this morning and after breakfast, I had to be back at the gym to help teach in a spin-a-thon.  The rest of the day I spent around the house cleaning and catching up on some work for the week.  Really not a bad way to spend a rainy Sunday. 

I ate well this weekend too, obviously.

And that about sums it up.  The next few days are going to be down right miserable in terms of heavy rain and cooler weather.  I even overheard potential snow which I am completely disregarding.  The thought of snow at this point makes me want to vomit.

your breakfasts are all making my mouth water!!! I am laying in bed now envisioning what I want to create for the morning!  How did you cook your eggs/how many?  They just look so delicious and photogenic!!!

Thanks girl!
I usually make a big pan for the both of us but the ratio I use is 3 eggs and 4 whites. I spray a non-stick pan, crack the eggs (don’t mix before hand) and add the whites. I let this sit for a few minutes, THEN i break the yokes and gently scramble. The secret is adding a pat of butter when the eggs are starting to form and fold it in. I don’t ever whisk or beat the eggs but gently cook them all in the pan. It really does make the best scrambled eggs.

Happy Birthday to your Dad! Hes so young! How fabulous. I am always disturb when restaurants with great atmospheres have just mehhhh food. Yayy for froyo to save the day though. Hope the launch went well. I can't believe we're getting antoher release soon- yikes!

I introduced my boyfriend to the world of froyo this weekend and he too was quite impressed, haha.  I'm not sure how people have survived up until this point without it! ;)
