Stay At Home Weekend

My goodness, another weekend already? Not that I am complaining for a little break, but I just can not believe how fast this summer is going.

Regardless, I was ready to get through the workday with the intention of starting my weekend as soon as possible.  For once, I have a FREE weekend, meaning no trips, no work, and no demanding schedule.  It feels fantastic!  Although I have a few maternal tasks to attend to (ie…my poor dirty house that needs a good cleaning or the overflowing laundry basket that I’ve neglected) I plan on taking these next two days to get caught up on my life at home, spend some time with Toly and friends, and try to get some real relaxing in there.  I haven’t done much of that in awhile.


This bowl has already made an appearance this week but it was good enough to make an encore.

I had meetings all morning in the office and a conference call that was going to run over lunch.  I knew I wouldn’t really have time to run home or run out in-between, so I brought my lunch with me.


Big salad here.  Baby spinach and romaine, cherry tomatoes, red peppers, black beans, cucumber, red cabbage, grilled chicken, hummus and balsamic.

When I make my salads to-go, I don’t mess around with the small tupperware.  One, I would be kidding myself to think it will all fit into a medium sized container and two, even if it did, there would be little room to mix and eat. I like to do it up in an oversized storage sized glass bowl.  Much better.

My lunch was complete with a juicy peach.

After work, I went straight to the gym for a little RPM practice.  We launch our new release tomorrow morning so I needed to run through my tracks so I would be fresh for tomorrow.

Dinner tonight was low-key.


I sauteed zucchini, squash, eggplant, broccoli and chicken sausage in a bit of olive oil and fresh garlic, basil and rosemary. I then added some creamy balsamic dressing, feta cheese and served it over a bed of spinach.

These vegetables (minus the broccoli) all came from the garden so my intention was to make something simple and fresh.  Oh and delicious, which it was!

Now I have a few more things to work on and then I can finally unwind.

  4. I love your fresh, clean eats!!! Stay at home weekends are sometimes the best ones! My weekend is like yours! Relaxing, time with family, groceries, laundry, crossfit…nothing exciting but very much needed 🙂

  9. You definitely inspired my dinner tonight…those sauteed veggies look amazing! It has been a while since I have cooked with zuchinni and squash and so it definitely in order. Just wish I could go pick them from my backyard
