The Season for Salads

Hello my friends!

Today got away from me….again.  I really wanted to avoid one big long post but I am just now getting to my blog.  I promise to get this routine thing figured out shortly.  Bear with me for a few more days. :)

Speaking of new routines, this week began my new schedule at the gym.  I picked up another RPM class so my Thursday 5:30am class got moved to Friday and I now teach Thursday’s at 9:00am.  I wasn’t sure how I would feel about not working out first thing in the morning (I’m a morning exerciser all the way) but it was actually kind of nice to wake up a little later, read some emails, drink a cup of coffee and eat breakfast before heading to the gym.

I had a whole new group of spinners this morning so it was nice to see some new faces in class.

Once home, showered and dolled up for the day, I had to run a few errands and then I met my brother-in-law for lunch. We met at Panera since it was close and we both were on a time limit.

I had the Grilled Chicken Cobb Salad (no bacon or cheese) and saved the apple for later.  FYI: Every time I go to Panera, I have to ask for the apple or else I automatically get the baguette. Anyone else have that problem?

Not to totally knock on my Panera though because I’m pretty sure the few times I’ve been there, they have walked around with freshly baked cookies for free for their customers. No lie.

Today was no exception.

Now that is a way to get people coming back!

I know you are all so tired of seeing so many salads on here but I truly can not help myself.  I crave them all. the. time.

For example, I thought about doing something new for dinner tonight.  I really did.

But then this happened…..

Dinner

There really isn’t anything to it.

Strawberry Feta Pecan Salad with Pan Seared Tilapia
Entree

Ingredients
  • 1 tilapia fillet
  • EVOO
  • salt and pepper
  • Pan searing flour
  • Romaine
  • Cucumber
  • Strawberries
  • Roasted Asparagus
  • Roasted Pecans
  • Feta Cheese
Instructions
  1. Roast asparagus and pecans in a 450 degree oven for 10 minutes. While cooking, prepare fish by seasoning with salt, pepper and flour. Heat a teaspoon of oil in a small skillet and pan sear for 3-4 per side.
  2. Assemble your salad and top with fish and your favorite dressing. (I used raspberry balsamic which was perfect!)

Salad season will send soon.  Pretty soon you’ll be inundated with soups and pumpkin. It’s coming, don’t worry!

Product Spotlight:

I’m not sure if I have mentioned this or not, but lately, I’ve been experiencing major eye problems.  I swear I’ve been to the eye doctor more in the past 3 months that I have in my life.  Things are getting sorted out but it has meant that I have had to rely on my glasses more and more.

Comfort wise, the glasses were also right on.  I’ve been wearing them now all week and really do love the way the fit.  I even wore them to workout (which I rarely do) and they stayed comfortable on my face during a treadmill run.

That Panera salad is my absolute favorite!! I always ask for it without the cheese and the bacon, too… I’m not really a fan of either. I love that they’re not stingy with the avocado. What?? Free cookies?? I’m jealous!

I was so surprised at the amount of avocado they put in it! They usually are pretty stingy when it comes to their salad ingredients.

I didn’t realize you’re an RPM instructor too! I am as well! That deal from firmoo is a great deal! I just got new glasses otherwise I’d totally take advantage of it!

My main problem with Panera sides is that their apples are so tiny, I like apples literally the size of my face haha.

Sometimes I feel like I shouldn’t eat so many salads,then I remember how crunchy and yummy and satisfying they are and I get over it :)

I’m so excited for pumpkin and apples and apple cider! As crazy as it may seem, now that I’m leaving SoCal (and it’s lack of seasons), it will be nice for fall to come around and actually WANT those fall flavors and see the fall changes. It’s the little things. :)

Every time I go to Panera, I know I *should* get the apple…but their baguettes! It’s just too good to say no haha. Once upon a time, I was at Panera and ordered half a sandwich, and the guy behind the counter was like, “Are you sure? The full sandwich barely costs more!” And I was like, “Yeah, but it also has like 900 calories.” (I’m not a calorie counter AT ALL, but that’s just a bit too much for one item of food, you know?). And then when he asked me what I wanted as my side, I was like crap. Now that I’ve been all must-save-calories to him, I HAVE to order the apple. Haha. So I ordered an apple, but when I got my order, they actually gave me the baguette instead. Best day ever. Hahahaha.
