The Weekender {3.14 – 3.16}

It was a nice, relaxing weekend, just as I predicted.

It’s nice to be back on the “all-american” schedule with weekends off.  Saturday, I knew I had a small list of things to get done and wanted to tackle my to-do’s early on to leave the rest of the night open.

It began with a hearty breakfast.  Scrambled egg, whole wheat english muffin with sun butter and mashed banana, and a few strawberries on the side.

When John woke up, we hit the gym where I managed to complete a nice 3 mile jog.

We got back, cleaned up the apartment and I headed out to run some errands.

When I got home, I was pretty excited about what came to mind for dinner.  I was in the store and thinking I was going to make pizza, but I couldn’t decide on toppings.  Suddenly, I spotted some chicken meatballs and had the brilliant idea of making Chicken Meatball Grinders.

I can’t tell you the least time I’ve had this (if ever) but they were delicious!  I paired the sandwiches with a simple caesar salad to go alongside.

Unfortunately, as much I as tried, I couldn’t manage to stay awake past 9:00pm and called it an early night.  My sleeping schedule hasn’t posed a problem during the week since I have to be up pretty early for work, but on the weekends, it kind of sucks waking up at 6am.

I’ve seemed to overcome my coffee aversion and have been able to enjoy a cup of decaf on weekend mornings.  I’m still not CRAZY for it like I was, which is probably a good thing, but it’s nice to wake up to a warm cup of coffee some mornings.

I eventually got really hungry and put together some breakfast.

These were the Trader Joe’s Multigrain Waffles and they were great!  I’ve never had them before but they are definitely more thick and fluffy than any other frozen brand I’ve had.

I topped them with some sun butter, banana, a pinch of granola and syrup.

John and I headed to a new church this morning in hopes of finding one that we like.  Fortunately, this experience was so much better than last week.  We think we have a winner!

After, we hit up Chipotle for lunch.

I’ve been eyeing Chipotle for a few weeks now and more than ready to face plant into some guac.  I tried the new Sofritas (marinated shredded tofu) which was pretty tasty!

In true Sunday fashion, we proceeded on to our next stop, Trader Joe’s.

Fully stocked for the week and ready for a full week of meals.

Starting with tonight’s dinner….

I made Jessica’s Coconut Chicken Fingers with an Apricot Dijon Dipping Sauce.

I subbed coconut flour for regular flour but that was the only change on the chicken.  For the dipping sauce, I used what I had which was apricot spread, dijon mustard, and honey.

Served with sweet potato slices and brussels sprouts.

Pretty good!  Mine didn’t get very crunchy though but still quite tasty.

And with that, the weekend comes to a close.  I almost forgot how fast these two days go by.

Glad you had a nice one! Your breakfasts always look AMAZING. How good is chipotle’s guacamole? Gah! The best! The chicken looks good! Putting it on my to make list. <3 <3

All your food has me drooling! Chipotle’s guac really is the best, isn’t it?! I have those coconut chicken fingers on my “to make for dinner” list. I’m glad to hear they were pretty good. They seem easy enough, so that’s a plus!

I had them on my Pinterest list to make and then when I saw you talk about them last week, it gave me a friendly reminder. John wasn’t a big fan but I thought they were really good!
