Thanks Lesley! I am honored that you thought of me for these!
It has been four days since my surgery, and I am still recovering nicely. No relapses yet! My steri strips fell off that were covering the incision on my outer cheek. At first, I was scared to death because I thought the cut was going to be a lot worse, but to my surprise, it looked so good!
The swelling continues to decrease each day, and even the coloring is getting so much better. I really thought it was going to be so much worse. There is still a chance that my face may pucker in, in which case I may need to see a plastic surgeon, but that is only "if".
It's amazing to think that this is how my face looks after going through a 2 hour intensive surgery with multiple incisions, muscle tears, and the biopsy of a massive lymph noid,
Compared to this!
This was me after my "simple" and "routine" wisdom teeth extraction in June. Obviously, something wasn't right here.
It scares me to think what actually happened during this surgery. I will never know, nor do I think I want to.
I was able to sleep an hour longer than I have been, but by 7am, the pain got to severe and it was time for some Vicoden. Have I mentioned that I am now on bottle 2 of this stuff? I fear that I may be developing an immunity towards the drug, but as long as it keeps the pain away, I'll work on detoxing later.
After the meds kicked in and Toly woke up, we laid around, read the paper and eventually got working on Sunday Breakfast.
I haven't made Pancakes in ages, and knew the soft pillows of goodness would be perfect for this week's breakfast.
Today, it was Whole Wheat Apple Cinnamon Pancakes
In the mix, I added 1/2 Cup of Chunky Apple sauce, lots of cinnamon, flax and chia (shhh, don't tell Toly!) and vanilla.
I sauteed one diced apple in a little water and cinnamon and added a few roasted walnuts to the pan.
These came out wonderfully! Super fluffy but the applesauce gave them such a nice texture. The apple compote on top was also fantastic!
My cakes were topped with the soft apples, yogurt and a wee bit of Honey Almond Butter that is buried in there somewhere.
Afterwards, I finally mustard up enough energy to drive myself to the store to pick up just a few things. Milk, eggs, bread, you know the basic things that I normally forget about. Poor Toly, it's a sure bet that our fridge is stocked with Greek Yogurt and Organic Tofu, but you wouldn't believe how many times I forget to get 1% milk. He asks for one thing from me and even that is a lot for me to remember. ;(
Today, I am happy to report that I did remember the milk, admists a few other random things that made their way into my cart. Pumpkin Pie Chia? What, that must have jumped in when I wasn't looking!
I waited a little too long in between medication dosage, and half way through shopping, my mouth began to throb in pain. I guess every 6 hours is still just pushing it. I can make it to about 5 hours, before I am rummaging for the bottle. Just like a true drug addict!
I got home, popped some pulls, put things away, and waited a little longer for the meds to kick in and until I was hungry for lunch.
I hated up some leftover Snobby Joe mix and topped it on a heaping amount of steamed spinach and broccoli. Finished with pickles, honey mustard and a few Sweet Potato Chips for scooping.
The broccoli was quite mushy, but the only way my mouth could tolerate it. Actually, it was pretty darn tasty!
I never really think to take a picture after everything is all mashed together because I always think it probably doesn't look very pretty, but who am I kidding, you guys are just as weird as me when it comes to outlandish food creations. To the average Joe, this may look like trash, but to the eccentric foodie, this is pure treasure! It was just as delicious as it looked. (If this at all looked delicious to you)
I am attempting to produce an actual Sunday Dinner tonight. I really have to keep working my mouth as much as I can tolerate, so even though it's uncomfortable, eating solid food is important for me to heal correctly.
I've been slowly incorporating solids but tonight I am going to attempt Salmon. I figure it's still soft but will be a bit challenging to chew.
I have a pretty amazing recipe in the works for dinner, so make sure to come back later for the details!
Best wishes for a relaxing Sunday everyone!

I'll admit, staying creative everyday can be challenging and I am sure that some days are a lot more mundane than others, but none the less, I still am completely honored that Mara was kind enough to think of me for this one.
