For being a Monday, it was pretty great on my end. John had off and volunteered to take Grayson for the majority of the day so I could catch up on work and have some “mommy time.” It was glorious! I taught my morning RPM class, spent over an hour in Target actually shopping and picked up a few new sweaters for fall, and then did a few hours of work at Starbucks.
Although I made a regrettable mistake with my drink order. It happened to be my free drink voucher and every time I get these, I always feel compelled to order the most expensive drink on the menu. For some reason, the Salted Carmel Mocha latte was calling me so I decided to give it a try. Holy cow is that thing sweet! It was way too much for me, but I drank it anyway and then proceeded to have an upset stomach for most of the day. Live and learn.
As nice as it was to have a full day to myself, I definitely missed my fam and was happy to have them return later that afternoon.
Backing up a bit to breakfast, I have a really delicious and easy make-ahead meal for your fall mornings. Since it’s obviously pumpkin season, I, like many, have been adding this quintessential seasonal ingredient to every and anything.
I am also all about make-ahead breakfasts for our busy mornings. Trying to get myself and a toddler fed and out the door before 8AM requires a lot of planning and coffee. This recipe for overnight pumpkin oatmeal is perfect because it literally takes two minutes to put together the night before and all you have to do in the morning is dish it out and eat.
Grayson loves this but will only eat it heated up and with peanut butter of course. I added pumpkin seeds to my bowl, but you could virtually add any topping you’d like.
After eating this healthy and nutritious breakfast, our tummies are full and we are ready to face the day!
