Just as fast as this past week went, so did the weekend.
We had a few things planned and some room for unplanned fun so it all came together in the end.
I was up at my normal 6am hour on Saturday morning. Thankfully, I was able to wait a few hours before I needed breakfast.
I enjoyed a whole grain english muffin with sun butter and mashed banana, egg whites and strawberries with a side of Giuliana and Bill.
I eventually woke John up and we got ready to head to our doctor appointment. We were both SO excited to go, thinking we’d get to see the baby and possibly even have a small chance at finding out the sex, but sadly, we were told once we got there that they wouldn’t be performing an ultrasound today. I wasn’t set to get another one until 18 weeks!
As disappointing as it was, we still got to hear the heartbeat, which I swear never ever gets old. Every time I hear the heartbeat, that sound stays with me for days and just consumes me..
Other than that, the appointment went well. Me and the baby are healthy and happy and growing like champs.
We came back home, had some lunch, and then I rushed off to my hair appointment.
By the time I got back, John was gearing up for the Final Four game and I was gearing up for some dinner. We have both been craving sushi like nobody’s business, so I made a trip to Whole Foods to pick up a little.
And by a little, I mean a sushi feast.
FYI: this is what happens when you send a hungry pregnant lady to the store with a craving. I got a variation of a vegan vegetable roll, a brown rice cali roll, and a shrimp tempura roll along with some vegan spring rolls and a spicy kale salad.
I was one happy lady after this!
Our night ended as it normally does – me passing out on the couch around 9:00 and John eventually waking me up, coaxing me into bed.
We were out the door early this morning to make it to the early service at church. On the way, we grabbed breakfast from Panera.
After church and our pre-marriage class, we were both starving for lunch and I had the idea of pizza.
There was a Bertucci’s down the road from church and we both decided that sounded just right.
Lunch pizzas are great for sharing! We split a caesar salad to start….
And a beautiful pizza that consisted of spinach, roasted mushrooms and eggplant, prosciutto, and goat cheese on a whole grain crust.
This pizza was so good!
Once lunch was over, we did our usual Sunday grocery shopping trip and then completed a few more errands before calling it a day.
Back on the home front, I cleaned the apartment a bit while John did the laundry and eventually, we came back together for dinner.
This is one dish I haven’t made in ages! Almond Crusted Tilapia is such an easy and delicious recipe. Definitely add this one to your meal plan if you need a quick, healthy and tasty recipe this week.
And that concludes the weekend. I’m not sure what is on tap for this upcoming week quite yet. My birthday is this week so there’s that, but truthfully, I haven’t even really given it a second thought this year. We might go out to dinner or fro yo but other than that, it’s just another day.
